The chef
Thirty years of bringing together cooking and science. A graduate chef, PhD in nutritional epidemiology, full professor at the Faculty of Medicine, Université Laval — I cook the way I teach: with rigor, pleasure and respect for the product.
No pretense, no unnecessary staging. Refined canapés, precise flavours, deliberate plating. Fine cuisine that brings people together, eaten standing, starting conversations.

The offer
A menu of varied canapés — savoury and sweet — prepared on-site in your kitchen, plated and served at service time. I adapt to your event, your space and your guests.
A menu designed with you according to the number of guests, the tone of the evening and dietary restrictions (allergies, vegetarian, gluten-free).
Mise en place and plating in your kitchen. A functional kitchen is required. Serving dishes may be provided by arrangement.
Fresh, local products whenever possible. No compromise on taste, texture or nutrition. No prefabricated dishes.

What to know
I usually offer these services only in December, during the weeks leading up to the holidays. For other periods, please contact me at least 4 weeks in advance. My main activities remain teaching, research and Culinary Medicine.
The logistics of a home reception justify a minimum of 10 guests. No strict maximum — let's discuss based on your space and your kitchen.
To cook a tailor-made menu, I need at least two weeks to plan, source the ingredients and prepare the mise en place.
I travel within the greater Quebec City area. For more distant zones, write to me — we will assess feasibility together.

The rate depends on the menu chosen, the number of guests and the format. No posted price — every event is unique. Write to me with your parameters; I will come back to you with a tailored proposal.
Yes, without hesitation — allergies, intolerances, vegetarian or vegan choices, religious or medical restrictions. Mention them from our first contact so I can design the menu accordingly.
Ingredients, preparation, on-site cooking and service of the canapés. Serving dishes, specific equipment or the presence of an assistant are discussed case by case according to your space and your needs.
A functional kitchen with an oven, cooktop, a clear counter and access to a refrigerator. No professional equipment is required — I adapt to your home kitchen.
I do not supply alcohol or beverages. You remain in charge of your cellar and your bar. I can, however, suggest pairings if you wish.
